recipe: irish soda bread



3 cups flour 
¾ cup sugar 
3 tsp baking powder 
1 tbsp caraway seeds
½ cup butter 
1 cup raisins 
1 tsp vanilla 
2 eggs, beaten 
1 cup milk

1. Cut butter into dry ingredients
2. In a separate bowl combine milk, eggs, and vanilla then mix into dry ingredients.
3. Pour into a buttered, floured 9" cake pan
4. Bake for 45 minutes at 350 degrees. Test with a knife- should come out clean when done.

This is one of my favorite things and a St. Patrick's Day tradition! It's like a scone, a pound cake, and a biscuit had a baby-- and it was delicious!
